To make this weekend: Italian Sausage Stew

A friend shared this recipe with me several years ago. It originated in an unspecified cookbook in Glastonbury, CT.... though I'd like to believe it has been passed down through generations on scraps of paper. I have made this stew at least 20 times and every time I am thrilled I did. It does take a little bit of time (about 2 hours total), but it is really worth it. I make it on a Saturday or Sunday for dinner, or save to eat throughout the week as lunch.

Italian Sausage Stew

12 oz. raw Italian Turkey Sausage, casing removed & crumbled
1 cup onion, chopped
1 clove garlic, minced
2 cans beef broth
1 28oz. can whole peeled tomatoes, undrained
1 cup carrots, chopped
2 zucchinis, chopped
1 tsp. dried basil
1/2 cup rice
1 can white beans, drained & rinsed
Fresh parmesan, for garnish

Saute sausage with onion and garlic, breaking up the sausage as it cooks. Once meat has browned, remove fat from pan using turkey baster*. Add beef broth, zucchini, carrots & basil.  Add tomatoes and use kitchen shears to cut them in 1/2 or 1/4 as you add them in*. Bring to a boil. Reduce to simmer. Cover and cook for 45 minutes*.  

Add rice and beans, cover and cook for 15 minutes. Top with parmesan and a side of focaccia bread. 

Notes
  • The sausage should give off limited fat, but combined with the water from the onions, it will yield about 1/4 cup.  You are adding liquid back in with the broth which will replace the lost flavor, but not the lost fat!
  • Why not just buy diced tomatoes?  Whole peeled tomatoes have much more flavor and are the more "select" fruits.  Plus, the big chucks allow me to fish it out for Jonah who hates tomatoes (but eats ketchup like its going out of style.) 
  • I cut my carrots and zucchini small for little mouths, if you want to slice them bigger, just add 10-15 minutes to the cooking time.
