Crispy Roasted Potatoes

Sometimes it's the simplest recipes that I can't figure out. I love a good crispy roasted potato, but I was struggling to get the crunch I wanted. They were either soft but undercooked or chewy and overcooked.  

Many attempts and finally, this works every time!


Crispy Roasted Potatoes

1.5 lbs Baby Potatoes
1.5 Tbsp. Olive or Canola Oil
Salt
Pepper
Garlic Powder
Onion Powder

Preheat oven to 400. 

Cut potatoes in half. Toss with oil, salt, pepper, garlic powder, and onion powder. Or use Cajun seasoning. (measure with your heart)

Place on a baking sheet, cut side down.

Bake at 400 for 30 minutes.
