Faker Tots!

This is not your cafeteria-style school lunch tater tot!  The main ingredient in these tots is chickpeas, a legume that is low in fat and packed with protein and fiber. Paired with a few simple ingredients, these tots are a tasty and healthy alternative to their greasy, deep fried counterpart.  The kids can easily help make this recipe and they'll enjoy the light, crunchy taste and texture (not to mention dipping them in a favorite sauce).  My babes eat these as snacks and as a main dish for lunch or dinner.  Pack-able, freezer friendly, and can be made gluten-free and vegan!

Crispy Bean Tots

2 15oz cans chickpeas, drained and rinsed
1 egg or chia egg (1 T chia + 3 T water)
1 clove garlic
1 cup breadcrumbs (I used Panko)
1/3-1/2 cup onion, chopped
1/2 tsp salt
1/4 tsp pepper
1/2 cup cheese, diced or shredded (optional)

Preheat oven to 450 degrees.
Grab one large sheet pan and coat with non-stick spray or line with parchment paper.
Drain and rinse beans.  Add to food processor along with rest of ingredients.
Process until smooth (will need to stop and scrape sides 1-2 times).
Remove mixture from processor and form into ball.  
Divide ball in half, then half again so you're working with four smaller sections.
On a flat surface, take one section and roll into a log.  Take a knife and slice through making 1/2-3/4 inch pieces.  
Roll each piece between your hands and flatten the top and bottom with your thumb and index finger.  
Place tots on sheet pan and coat with oil spray.  Bake for 10 minutes.
Turn tots over and bake for additional 5-7 minutes or until golden and crispy.
Serve warm alone or with a sauce or dip.

Yields 50-70 tots
