3 ingredients = Chocolate Banana Cups

One of my fave blogs, My Whole Food Life, recently posted a recipe for 3 Ingredient Banana Cups.  Of course "3 ingredient" caught my eye, but then I saw the picture.  I was done.  It was a perfect little package that resembled a peanut butter cup, but with banana in the center.  Well, I LOVE bananas and if they're covered in chocolate, I LOVE them more!  Turns out the recipe is simple, fun, and versatile.  If you've got little ones in your life, this recipe allows for small hands to prep, mash, and assemble.  And of course, lick the spoon!  Check out My Whole Food Life's 3 Ingredient Banana Cups.  Here's how I made them:

Chocolate Banana Cups

1/2 cup chocolate (chips, chocolate bar)
1/4 cup almond milk
1 ripe banana

Grab a 6-cup standard muffin tray and line with paper cups (or use silicone tray/liners).
Start by melting the chocolate and milk together over a low heat using a double boiler.
Once the chocolate and milk are combined and smooth, spread half the mixture among the six muffin cups.
Pop tray in the freezer for 10 minutes.
While waiting, mash the banana.
Pull the tray and spread the banana among the six muffin cups.
Pour the remaining chocolate into the cups, covering the banana.
Return the tray to the freezer and keep frozen until served.

Yields 6 dessert cups.

Notes:

  • These cups must remain in the freezer.  Once at room temp, they melt immediately.
  • Have some fun with these cups!  Try different flavored chocolate, added toppings, or swap the banana for a dollop of peanut butter, almond butter, or coconut.
