Ribs (by Tim)

Ribs!  Yes, I said "Ribs"!  I'm a vegetarian, but my husband is a meat-eater, and he cooks an awesome rack of ribs (according to my parents, in-laws, and Tim's co-workers).  So we asked him to do a guest post on our blog!
These ribs are slow-cooked in the oven with only a few ingredients and the end result is delicious!  Here's how you can knock the socks off your family and friends at your next gathering....

Ribs (by Tim)

1 Rack of ribs (any except baby back)
1 bottle of barbecue sauce (your choice, I prefer Hickory flavored)

Dry Rub:
1-2 tsp Creole Seasoning
1-2 tsp Curry
1/2-1 tsp Cumin
1/2-1 tsp Jerk seasoning
Dash of Chili powder
Dash of Nutmeg
Dash of Paprika

Preheat the oven at 200 degrees.
Start the dry rub by mixing together spices in a bowl.
Score the ribs between each bone.
Coat the ribs with half the spice mixture and let sit at room temp for 30-60 minutes.
Place in oven and cook for 1 1/2 hours.
Remove from oven and coat with half of the barbecue sauce.
Return to oven and cook for another 1 1/2 hours.
Remove ribs from oven and coat again with remaining barbecue sauce and sprinkle on remaining spice mixture.
Return to oven and cook for 1 more hour.
Remove ribs from oven, cut apart and serve (they should almost fall off the bone).

Servings: 2-3

Start with a dry rub

Coated with barbecue sauce

Tender, flavorful, delicious!
