Express Post: Fast, Fun Dinner... Burritos!

It's the weekend!  If you're still trying to decide what to eat for dinner, I've got a recipe to share!

My sister posted this week about Chinese take-out and she showed us an easy, delicious way to prepare a healthy "fast food" dish at home.  This week I came across a similar type of recipe - homemade burritos  made in minutes!

This meal worked perfectly because I had all the ingredients on hand - wraps, beans, salsa, onion, avocado, and cheese.  Plus, I happened to have leftover rice which was an added bonus!  The best part?  It was a meal that we could tweak to our individual tastes so everyone was happy.  This was fun to make - and extras can be frozen for future dinners.

Ingredients to grab:

1 package tortillas
1 can black beans
Chili powder, a few shakes
1 jar salsa
1/2 large onion, diced
1 package shredded cheese

Optional additions include: refried beans, rice, guacamole, green pepper, avocado, tomato, sour cream

Directions:

Grab all the ingredients plus foil and parchment paper and clear a large flat surface. 
Preheat oven to 375 degrees.
Using foil and parchment paper, tear a square of each and place parchment on top of foil. (The parchment will prevent the burrito from sticking to the foil). Make an assembly line. 
Place tortilla on top of parchment.  
Top with black beans, approximately 1/4 cup.
Grab the chili powder and give a few shakes on top of the black beans.
Add salsa, approximately 1 tablespoon.
Add onion, approximately 1 tablespoon.
Sprinkle cheese on top of onion.
Roll up burritos and place directly on oven rack.  Bake for 15 minutes.
Serve with Sisters Consuming Life guacamole and salsa!

Makes 6-8-10 burritos (depending on size of tortilla package)

Keep cooked burritos in fridge for up to a week or freeze.

Notes:

  • Feel free to add or replace any ingredients you love or have on hand.  My personal favorite burrito is made with refried beans, black beans, chili powder, salsa, onion, green pepper, and Daiya shredded cheese -with avocado or guacamole on the side!  
  • These burritos hold up well in the freezer and are great reheats for lunch or dinner. Simply pull from the freezer ahead of time and reheat at 375 degrees for approximately 20 minutes.
